Happy Saturday everyone!

Today’s weather started out super sunny and gorgeous, so I thought it would be the perfect day to hit the pavement for a run!

First, I cleaned the apartment and my room. I love having fresh, clean surfaces. It makes my pictures purtier, too. ;)

After I scrub-a-dubbed, I ventured outside. It was so nice having light layers on and running in the sunshine. I kept my pace pretty slow, and just tried to enjoy the weather and scenery. There was a hill that was hell, but by the end I felt refreshed.

Afterwards, I was more than ready to eat. This was more like brunch for me since it was around noon. Since I pretty much skipped breakfast, I was ravenous.

I decided today was the day to make some boatmeal! Katie is the brainchild behind my breakfast, and I couldn’t wait to dig in. I decided to make her pumpkin pie boatmeal with peanut butter mixed in. Peanut butter and pumpkin may sound weird, but I love this combo.

I didn’t have a mini loaf pan lying around, so I used my muffin tin and filled three cups with the batter. After baking, I topped it with a little syrup and dug in. It was insanely good. Gooey, doughy and creamy all at the same time. I can’t wait to try different variations on this!

I digested a little, and Sara and I hit up Trader Joe’s. I can’t wait to show you all of the fun things I got! Allie, Sara and I went down to the lake near out apartment to try to soak up the sun and after looking at the cute ducks swimming around in the water, the sky turned ominous and gray. We got caught in a rainstorm and bolted home!

Now we are lounging, watching Cupcake Wars. It’s intense! It’s also making me want a cupcake…

We are heading out to Red Lentil for dinner later. Last time was delicious, can’t wait to try something different this time!

    Oooh…that looks so yummy. You know, I haven’t quite jumped into the whole pumpkin love thing. I know that every blogger and her mother raves about how amazing pumpkin is…but I’ve never really eaten pumpkin that wasn’t in a pie. I’m going to have to expand my eating!
