Bounce Back

First of all, I want to thank ALL of you for your amazing comments about my guilty feeling this morning. I was definitely in a funk. I really can’t get over how supportive, helpful and full of love the blog world is. You all are so so sweet :)

I had to laugh off the rest of the day because of a couple of things that happened.

1. I definitely didn’t read the weather correctly this morning because I walked out of the house in black leggings, black dress and a gray sweater. I realized as soon as I walked out it was over 70 degrees out. I was sweating in minutes.

2. The plans with work fell through, so in reality I could’ve gone to the gym. Whatevs.

So, I came home and rested. I probably needed it to bounce back! I’m sorta excited to hit it hard at the gym tomorrow :)

So, I think I bought too much produce at the store this week. I might have even chose too big fruits and veggies. Hello, look at the size of this thang!

I think I just go crazy picking out pretty lookin’ produce. Then, when I go to make a meal, I freak out and try to throw everything in one dish.

Case in point, dinner!

I cooked up some ‘o this:

I’ve missed quinoa! I sauteed a boat load of veggies in olive oil:

Then I mixed them with cooked quinoa and topped it with a dollop of goat cheese. Heaven.

See the little white tail? It’s done!

So, I have a question for you. Do you ever meal plan? I’m trying to figure out if this is a good idea for me to save more money, use my money more wisely and get better use out of my produce. I really want your opinions!

    I try to meal plan. Whenever I do we tend to eat out and snack less so it’s always a good thing but I find it hard to be consistent. It’s a great idea though and one I keep trying to make work.

  2. I meal plan most of the time, and I think I’ve saved a lot of money by doing it. I like to play by cravings, so I try and have staples that don’t go bad and then plan my meals around a few “new” things for the week. Like, I’ll pick one type of cheese/vegetables/meat that I can use in a few different meals, particularly one that is on sale. And if you can find a coupon to use on top of that, you’re golden!

    Plus, then you feel more committed to making the healthy meals you planned as opposed to just grabbing something elsewhere. I love cookinglight.com for recipe ideas!

    I try to make at least a rough draft of a meal plan, so I don’t over buy in the produce dept. It usually helps out so that I’m not stressing about food going bad.

    • I agree with Kristi – I go the rough draft way too. That way you have things you need for healthy, simple meals ready to go, but you allow yourself some flexiblity as well. Sometimes when I plan everything out, I spend even more money…LOL!

    I never meal plan… occasionally I might whip something up on a Sunday that covers several lunches during the week, but usually I just make something out of what we have at home.

  5. I have SUCH a hard time meal planning! I buy for the entire apartment because we all eat the same things (for the most part), but then when I go to make a real dinner people are not on the same page. Like you said, I end up freaking out and throwing everything together in the same dish! I love me some ‘kitchen sink’ meals!

  6. I am laughing at that cantaloupe because I bought a super huge cantaloupe one time, like bigger than my head, and I was freaking out trying to think of how to use it all up, LOL. I actually ended up cutting the whole thing into chunks and freezing about half of it for smoothies later. I was drinking cantaloupe smoothies for weeks, but they were really good! Thankfully it was summer.

    I try to meal plan, I really do, but I usually fail :(

  8. Yum! I love quinoa. I meal plan, but I usually end up straying from it. It helps at the grocery store though!

  9. I try to roughly meal plan. Before I buy something that looks good I think of a dish that I could use it in and make it sometime during the week.

  10. We are definitely meal planners in our house. It really helps us stick to a budget and not end up with unused food that spoils. I hate when that happens. Plus, it helps me make sure I make good things for dinner. Otherwise I would end up eating cereal every night!

  11. I’m glad you were able to bounce back. It’s fine to take an unintentional rest day once in awhile. I know it’s hard, believe me, but it does a body good, and the mind too!
    that quinoa thing looks so good!! I had the best quinoa meal once when I was in the Netherlands. Can’t even tell ya!
    I don’t really meal plan because I live at college and have minimal control over what food is available to me, sadly.
