Can I just say one thing? TGIF!
It is hotter than hades where you are, too? I swear I can cut the humidity with a knife. Gross. One of my favorite ways to eat light in the summer is definitely fruit. Mango just happens to be my favorite fruit of all time. Nothin’ can beat standing in your swim suit with a peel mango in hand, eating it until the juice drips down your elbows. Please tell me I’m not the only one who has done this…
Here are some delicious looking mango-filled recipes!
P.S. Check out my guest post over on Carrie’s blog!

It’s colder than March here!
I’ve never done that but would love to be somewhere hot enough to; it sounds right up my street
And I literally just remembered as I drove home that I’ve got mango in the freezer… perfect timing!
Hey Gorgeous!! TGIF!
Where the heck is the sun and heat here in Vancouver?? We normally get a HOT summer and we haven’t really yet. BUMMER!

I’ve been loving mango as well. I make a mango smoothie pretty much every day, and I’m definitely the type to have mango dripping down my elbows

Love those parfaits! Pretty food just tastes better.
I totally agree that mangoes are so perfect for hot summer days!
When I worked in West Africa there were mango trees everywhere so we would grab a bunch to peel and eat in the shade of a hot day and just stuff ourselves silly
Hope you’re having a wonderful weekend A!
Oh YUM! Hope you had a wonderful friday and weekend!

Alas, with my busy weekend, I read the TGIF post on Monday (and it’s def NOT a TGIMonday kinda day!!) But the recipes are making me feel a little better already…..
I love to use some fruit in salad, always brightens things up and makes them that much tastier. Yummmmm.
I’ve just recently been getting into frozen fruit. Yum! Mango scares me a little for some reason but I need to give it a try. Haha.
Mangos are the epitome of Summer for me! I’ve had my eye on Angela’s Mango Breakfast Parfait for a while. I must make it soon! It looks so good.
