Nothing is as satisfying as throwing a modge-podge of things together in a pot/oven/pan and having them work.
I decided to do that the other night and bake up a batch of granola. Literally, I threw a bunch of things in a bowl and made up a “glue” to make it taste even better.
Best. decision. ever.
You could eat this granola by itself, in a yogurt bowl, on top of ice cream or just shovel it in your mouth by the handful.
I combined a ton of things that are tasty and good for you and wound up with a pretty awesome batch of granola. Win!
Crazy Good Granola (adapted from this recipe)
Wet ingredients:
- 2 T unsweetened applesauce
- 3 T peanut butter
- 1/3 c. brown sugar
- 1 T coconut oil
- 5 T honey
- 1 t vanilla
Dry ingredients:
- 3 c. rolled oats
- 1 T chia seeds
- 1 T ground flax
- 3 T flaked coconut
- 1/2 c. dried cranberries
- 1/2 c. cacao nibs
- 1/2 c. chopped almonds
- 1/2 t. pumpkin pie spice
- 1/4 t. cinnamon
Preheat oven to 350F. Mix wet ingredients in a small pot and bring to a boil, simmer on low for 10 minutes, until golden. In a large bowl, mix together dry ingredients and add in wet ingredients. Stir to combine. Spread over a lined baking sheet. Bake for 45-50 minutes, stirring every 10 minutes. Let cool/harden for 20 minutes. Devour!

usually chocolate chips are a must for me when it comes to granola but i guess anything crunchy or chewy added in..or sweet…

What a great combination! I love chocolate chips and/or almonds and/or honey in my granola. And the crunchier the better!

Great ingredient list on that granola! I recently made granola using Biscoff spread where you would use PB. It was pretty amazing! I also like using mashed banana as a binder and tossing in whatever nuts I have in the pantry.
Gotta have chocolate chunks and yogurt covered raisins in my granola
