Falling Into…Fall?

Remember those fall into the Gap commercials?

I couldn’t find one, but I did find this one:

Why aren’t all commercials that cool and entertaining? And how the heck do those girls dance in those heeled boots? I can barely dance when I wear flats.

Anyways, I realized that I haven’t even made any fall-ish recipes. So yep, I guess I’m finally falling into…fall.

Fake-Baked Apple

This was one of the easiest recipes I’ve ever made, and I’m pretty darn proud of it!

Core an apple and place slices in a small ramekin. In a small bowl, mash together a tablespoon of Smart Balance, a teaspoon of pumpkin pie spice and a teaspoon of brown sugar. Stuff the apple with the mixture. Cover with a paper towel and microwave for 3 1/2 minutes.

This is amazing as is…or topped with yogurt. I’m thinking ice cream might be the best option.

Pumpkin Bread Parfait

Let me say that first of all, this parfait happened after I had already devoured 1/4 of a loaf of pumpkin bread. This one to be exact. Call it a pumpkin high, call it inspiration, but this recipe was awesome, too. It’d make a great breakfast, snack, dessert. I almost wanted to blend it into a smoothie, but then I thought, “Calm down, you’re taking this too far.”

Take a container of yogurt and mix together with 1/3 c.pumpkin, 1 tsp. pumpkin pie spice and 1/2 tsp. cinnamon. Alternate layers of pumpkin yogurt and crumbled pieces of pumpkin bread. Top with pumpkin bread and sprinkle with cinnamon.

  2. I love any pumpkin recipes! I really want to try the pumpkin bread parfait! I just made some pumpkin pie spiced almonds and pumpkin oatmeal is really amazing.

  3. I could go for that parfait about now! My quickest fall recipe is either the pumpkin oats I make regularly or just cooking a squash. I know it takes a while to cook a squash, but the prep part is minimal.

  4. Ohh yay for pumpkin recipes! I love the idea of doing a little pumpkin parfait! That sounds delicious! When I was in London and we had left over pumpkin pie, we created a layered parfait and it was delicious!

  10. I love making microwaved apples in the fall! I also like to make microwaved pears – I chop up a pear, add cinnamon, granola and dried cranberries, and then microwave it for a minute or two. It tastes like a pear crisp! :)

    I have literally been making a similar apple creation for weeks now. I just can’t get enough. Mine is not quick though..it takes about an hour in the oven…but is SO worth the wait!!!

  12. I’ve been meaning to make baked apples! Thanks for the reminder. :) When I was in jazz during my first year of college, we did a show wearing heels and it definitely took some getting used to..if I really ever actually got used to it. lol
