Really, this soup is a good one for anyone! Plus, you can make it vegan/vegetarian if you want! It’s a real crowd-pleaser.
Actually, it’s more like a well-rounded soup. I have no idea if it’s a crowd-pleaser. I’m not that popular. Surprising, right?
Honestly, since there’s chicken and chickpeas in it, I thought it’d be cute to call it chick soup. Ain’t I clever? Do you wanna be friends with me now? Yes? No? I have wine!
- 2 T olive oil
- 1/2 white onion, diced
- 3 carrots, chopped
- 2 garlic cloves, diced
- 1 c. mushrooms, sliced
- 1 bell pepper, diced (I used 2 mini bell peppers)
- 2 chicken breasts, shredded ( I used this method to make the chicken)
- 1 c. pearl barley
- 1 can chickpeas, drained
- 32 oz. chicken broth *You may need to adjust the amt of water, this soup is thick*
- 1 t cumin
- 2 t salt
- 1 t garlic powder
- 1 t smoked paprika
- 1 t pepper
- 2 T cilantro, chopped
