Feeling Creative

Tonight at the gym was a milestone for me…I ran two miles! This may not be a big deal for most people, but I haven’t been able to do this since senior year of high school! When I did crew, I could run 3 miles easy. I can’t wait to get back into old habits! Plus, I didn’t need my inhaler today. I have exercise-induced asthma and it was such a relief to not use it!

On to dinner…

During my run, I couldn’t stop thinking about what I was going to eat. Carbs? Yes. Duh. But what would I top it with? Then I though, bean sauce! But not any bean sauce…

Garlicky pureed cannellini bean sauce!

The best part is, you don’t need to add any extra oil to the sauce. Just beans, parm and some seasonings.

Perfect Pasta

Garlic Bean Sauce

  • 1 can cannellini beans
  • 2 cloves garlic
  • 1/2 c. parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tbsp. red pepper flakes
  • Pasta of choice (I used whole wheat spaghetti)
  1. Place beans, cheese, seasonings and garlic in food processor.
  2. Pulse until smooth and creamy.
  3. Toss with pasta of choice.

The sauce turned out better than I thought: garlicky, smooth, creamy and protein packed!

Now I’m off to eat some peanut butter… :)

  1. Thanks for that sauce recipe, I can’t wait to try it! I don’t do alfredo sauce anymore but this looks like a great substitute!
