Homemade Lavash Chips

Hello, friends!

Happy beginning of the week! I wish I could say Happy Friday, but we still have a few more days to go before that phrase can be used!

This weekend, I was craving one thing: chips and guacamole. Although I definitely fulfilled that craving on Friday night, I left wanting more. So, instead of wandering through the aisles of the store and trying to figure out which chips were “healthiest,” I decided to make my own!

Remember this?

 Well, I finally figured out a way to use up the rest of the packet!

 These. are. crack. Just warning you.

Especially when dipped into this:

You must must must try this hummus. The best layer is definitely at the bottom!

Homemade Lavash Chips

  • 2 whole wheat lavash wraps
  • 1/2 packet chili seasoning (or spices of choice!)
  • Cooking spray

Preheat oven to 350F. Line a cookie sheet with tin foil and spray with cooking spray. Cut lavash wraps into small squares and lay out in an even layer on sheet. Spray another coat of spray onto chips and sprinkle with chili seasoning. Coat chips evenly. Bake for 15 minutes, or until crisp.

These two things go together like peas and carrots. Pb and J. Hummus and chips!

Squash Bread

Sounds weird, right?

I promise, it’s delish! And, yes other people tasted it. I wasn’t the only one.

Over the weekend, I saw Tina post her recipe for Paleo Pumpkin-Walnut muffins.  I was intrigued! I’m not gluten-free, but I had this ‘lil bugger lying in my pantry.

 Got that on sale at Target, baby!

I had all of the ingredients on hand…minus one. The pumpkin! So, I used a can of squash I had. I figured, it can’t taste too bad, right?

I know what you’re thinking, it’s almost spring! But honestly, I have a weird obsession with all things fall/winter and love enjoying them year round.

 So, I wound up making a few substitutions and adding some ingredients of my own. I poured it into a loaf pan and burnt my mouth eating my first piece–slathered with this amazingness:

Squash Bread (adapted from Tina’s Paleo Pumpkin-Walnut Muffins)

  • 1 c. almond flour
  • 1 c. canned squash
  • 2 eggs
  • 1/4 c. almond butter w/ flaxseeds
  • 1 T wheat germ
  • 1 t vanilla
  • 1/4 + 1 T honey
  • 1 t baking powder
  • 1 t cinnamon
  • 1 t pumpkin pie spice
  • 3/4 c. walnuts

Preheat oven to 350. Combined ingredients in a bowl and pour into greased loaf pan. Bake for 30 minutes, or until cooked through and knife comes out clean.

Best Body Bootcamp

Today marked day one of Tina’s booty-kicking Best Body Bootcamp!  I saw a bunch of other bloggers taking part in this, and I figured, why not?

I’m two days late, since the bootcamp started on Monday, but I decided to just pick up where I would have been, and Wednesday’s workout was definitely a doozie.

We aren’t supposed to post the workouts themselves, since Tina worked incredibly hard on them, but let me just say, focusing on being stable during workouts is something I definitely took for granted.

Planks are hard enough! But side planks with leg lifts? All I can say is, Tina, fantastic job!

As part of our plan, we are supposed to make two goals for ourselves.  Mine:

1. Drink 8 glasses of water a day.

2. Eat 5 servings of fruit and veggies/day.

I can do it!

I’ll admit, I’m a little nervous about the 50 minutes of cardio we’re supposed to be doing, since I am in NO way a cardio queen (strength training ‘fo life!) This will be a great challenge for me.

OK, off to get some rest before my last midterm and day two of boot camp!

Chili Baked Tofu

So, are you wondering how this whole not eating cheese thing is going?

Better than I thought!

The first day was rough, then it got a little worse. But it’s sorta like the 3 day hump. Do I still want cheese like crazy? Yup. But, I don’t miss it as much now.

I realized I rely on cheese for a large source of protein in my diet. So what’s a girl to do when meat just isn’t appealing every day in a lunch time salad?

Dress up some tofu!

 Ain’t they cute?

I had half a package of leftover tofu to use up, and I knew I wanted to bake it. After rummaging around in my pantry, a light bulb went off.

Chili mix + cooking spray + tofu = possible win?

Definite win!

These little nuggets came out crispy, zesty and spicy. Perfect for topping a big ol’ salad with!

Now my mind is racing for the other tofu/spice combos I can come up with!

Chili Baked Tofu

  • 1/2 package extra firm cubed tofu
  • 1/2 packet chili mix powder
  • Cooking spray

Preheat oven to 375F and line a baking sheet with foil. Spray baking sheet with cooking spray and lay out tofu on baking sheet. Sprinkle chili mix over tofu, spritz with cooking spray again and mix until tofu is evenly coated. Bake for 20-30 minutes, or until tofu has reached desired firmness.

Now what am I supposed to do with the rest of this chili packet?

Slurpy Noodles

I’m a woman of many talents…

I’ve always been a good eater.

 And a good drinker…

 Yep.

One thing I’ve always been really good at? Twirling noodles. My momma taught me well. You twirl on the spoon first, then you twirl in the plate once you get good at it.

Then I went to Italy and they don’t do that there. Fail.

 So now, I slurp when need be. And my friends, these noodles I made are meant for slurping. The more I say the word “slurp,” the weirder I feel about it.

The other day, I was craving a big bowl of noodles infused with Asian flavors. Soy, garlic, chili, you know the drill. Add a swirl of peanut butter to that and you’ve got yourself one delicious sauce!

 I’ve made a similar dish, but these are on par with noodles I get at a local Thai restaurant.

Slurpy Noodles  (serves 4)

  • 6 oz. whole wheat fettucini noodles
  • 1/2 c. broccoli slaw
  • 1/2 c. frozen peas
  • 1/2 package extra firm tofu, cubed
  • 1 T and 2 T toasted sesame oil, separated

For the sauce:

  • 3 T honey
  • 2 T natural, chunky peanut butter
  • 1/4 c. brown rice vinegar
  • 1/4 c. tamari or soy sauce
  • 2 T water
  • 1 T chili garlic paste

Heat 2 T sesame oil in a pan and add tofu. Cook until slightly browned and transfer to pan. Add remaining 1 T oil to pan and add slaw and peas. Cook on low for about 5 minutes, or until veggies are softened. Bring a large pot of salted water to a boil and add pasta. Cook until al dente and strain. For the sauce, combine all ingredients in a microwave-safe bowl and heat for 1 minute. Whisk to combine. When noodles are cooked and strained, add to pan of veggies. Pour sauce and add tofu to pan and toss to combine. Serve!

40 Days and 40 Nights

Fat Tuesday is over. I’m one sad girl. I didn’t get any beads, but I had one last meal of pasta with parmesan cheese to get me ready for the next 40 days.

 Um, where did Josh Hartnett go?!

I miss him.

 Anywaysss…last year I gave up chocolate and meat. This year:

 CHEEEESE!

Honestly, I’m a little nervous. I love cheese and I eat it nearly every day. Cheese and chocolate are pretty much my two main vices. It’s gonna be hard giving up the good stuff.

 It’s been a day, people, and I’m already having a difficult time. But, I came up with an awesome recipe to make me think “cheese? what cheese?” …Sorta.

Meet me new friend:

 Not really new, but the saltiness of the veggie bacon is a good substitute for the saltiness I want from cheese.

Now, meet the A E & B sandwich.

 That’s avocado, hard-boiled egg and veggie bacon piled high on toasted wheat bread. So. Good.

Toast up some bread. Boil up an egg. Fry Microwave some bacon. Slice up some avocado.

 (Yes, I like it burnt!)

  Take that, cheese!

Things I Discovered This Weekend

 Funfetti pancakes really exist. Meaning, now I don’t have to figure out how to make my own version of them from scratch.

Helloooo Hungry Jack.

All you can eat sushi and sake restaurants are one of the best ideas ever. The all you can drink part makes you think you’re more baller than you really are:

Whatever type of chocolate/cocoa powder is in Starbucks mocha is gross. The one time I decide to get something other than a coffee or a latte, it’s an epic fail. (Apologies to all of you Starb’s mocha lovers out there)

P.S. Did you hear about the guy who ordered the most expensive Starbucks drink?

Places like this really exist…not just in Colorado:

 Nothing satisfies more than a big bowl o’ pasta. Wait, I already knew that.

Spread The Love

Happy Valentine’s Day!

Hope you all are having a great day whatever you’re doing. Sitting on the couch eating a box of chocolates? Out to dinner with a friend/boyfriend/girlfriend/family?

This is how I spent my night:

 That would be double chocolate almond butter! Oh yes, I did.

Lately, I’ve become obsessed with these:

 So, I turned them into a nutty, chocolate-y spread.

 Consider yourselves warned. You may want to eat a zillion spoonfuls of this stuff. I mean, you could spread it on a cracker or cookie, but who where’s the fun in that?

Double Chocolate Almond Butter

Pour all ingredients into a food processor. Blend together until a “butter” forms. This may take awhile, depending on your processor. (It took mine about 10 minutes).

Guess Who’s Back?

Guess who’s finally back?


 Meeee!!! Don’t mind the USA hat. I’m just super patriotic, that’s all.

I can’t believe how long I’ve been away from the blog world. It made me sad and frustrated that I couldn’t get to my blog let alone comment on any of yours.

It made me even more sad that I’ve had no time to get to the kitchen and cook, bake or create anything. Now I’m sounding pathetic and whine-y. I miss you all and really want to try getting back to blogging more regularly, even if it’s only once a day.

On the upside, grad school is definitely a big change in my life, but I’m challenged every day and I’m studying something I’m so passionate about. It’s worth it!

Anyways…

I’m back with something from the kitchen!

After reading for awhile, I wanted something sweet but also healthy. I threw some things together and I think I came up with something pretty delicious! These are definitely not like normal cookies. The whole wheat flour gives them a more cake-like/muffin texture, but they still have awesome flavor.

Oatmeal Spice Flax Cookies

  • 1 1/2 c. whole wheat flour
  • 2 c. rolled oats
  • 1 t. baking soda
  • 2 T ground flax
  • 1/2 t. salt
  • 1 t. cinnamon
  • 1 t. pumpkin pie spice
  • 1/2 t. nutmeg
  • 1 egg white, beaten
  • 1 c. brown sugar
  • 3/4 c. unsweetened apple sauce
  • 2 T honey
  • 2 T canola oil
  • 1 T vanilla

Preheat oven to 350F. In a small bowl, mix together flour, salt, baking soda, flax, oatmeal and spices. In a medium bowl, whisk together sugar, egg, canola oil, vanilla, honey and applesauce. Mix dry ingredients into wet ingredients until well combined. Drop by tablespoon or with a cookie scoop onto a lined cookie sheet. Bake for 6-10 minutes. Makes 12 large cookies.

Delayed Resolutions

Happy New Year!

A little late?

It is January 26nd and I’m just now making my New Year’s resolutions. Procrastinate much?

I should probably make a life resolution to never pose like this/wear bowling shoes with a dress ever again.

Now that I think of it, I don’t think I’ve even made real New Year’s resolutions. No better time than never, right?

1. Drink more water

 I’m horrible at drinking water. I could drink seltzer all day long, but water? Bleh. It’s so boring. I know how badly my body needs it, so I’m sticking to drinking 4 big bottles full per day.

2. Floss daily.

Again, something I’m so bad at! I don’t want my dentist yelling at me next time, so I’m going to keep those chompers healthy!

3. Write more cards. 

I love getting cards on the mail. There’s something so personal about them; emails are fast and convenient, but isn’t it nice getting something in your mail box other than a bill or junk mail?

4. Practice more yoga. 

 I wish I could go to yoga three times a week. It relaxes me, makes me stronger and challenges my body. I’m going to try to practice it once a week. Yogini-status here I come!
